Gluten Free Chai Cookies
Ingredients:
- 1 cup gluten-free rolled oats
- 1 cup almond flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup honey
- 1/4 cup coconut sugar
- 1 egg
- 2 tbsp of your favourite Tula Tea blend brewed
- 1 tsp vanilla extract
- 1/2 cup raisins (optional)
Instructions:
- Preheat your oven to 350°F (180°C).
- In a medium bowl, whisk together the oats, almond flour, baking powder, baking soda, and salt.
- In a separate large bowl, beat the butter, honey, and coconut sugar together until creamy. Add the egg, tea, and vanilla extract, and beat until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the raisins, if using.
- Drop rounded tablespoonfuls of dough onto a baking sheet lined with parchment paper. Flatten the cookies slightly with the back of a spoon.
- Bake the cookies for 10-12 minutes, or until they are lightly golden around the edges.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
This recipe is gluten-free because it uses gluten-free oats and almond flour instead of wheat flour. The honey and coconut sugar provide a natural sweetness to the cookies, making them a healthier alternative to traditional cookies made with refined white sugar.
