Gluten Free Chai Muffins
Ingredients
1 Cup brewed tula tea blend
1/2 Cup Melted coconut oil or butter
¼ to ½ cup coconut sugar
2 Eggs
1 Tablespoon Vanilla Extract
1 Cup almond flour
2 Cups gluten free, All-Purpose Flour
Pinch of Ground Black Pepper
1 teaspoon Ground Cinnamon
1/2 teaspoon Ground Cardamom
1/2 teaspoon Ground Ginger
1 teaspoon Baking Soda
Instructions
1. Preheat oven to 375 degrees. Grease a muffin tin or line
it with paper liners.
2. Sift together the flours, baking soda, and spices. Set
aside.
3. Whisk together the tea, vanilla extract, melted butter/oil,
sugar, and eggs until thoroughly combined.
4. Pour the wet ingredients into the dry and mix just until
combined.
5. Divide the batter among 12 muffins cups.
6.Bake in the preheated oven for 20 minutes or until an inserted toothpick comes out clean.
7.Cool in pan for 5 minutes before turning out to cool completely on a wire rack.
