Gluten Free Chai Cookies

Ingredients:

  • 1 cup gluten-free rolled oats
  • 1 cup almond flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup honey
  • 1/4 cup coconut sugar
  • 1 egg
  • 2 tbsp of your favourite Tula Tea blend brewed 
  • 1 tsp vanilla extract
  • 1/2 cup raisins (optional)

Instructions:

  1. Preheat your oven to 350°F (180°C).
  2. In a medium bowl, whisk together the oats, almond flour, baking powder, baking soda, and salt.
  3. In a separate large bowl, beat the butter, honey, and coconut sugar together until creamy. Add the egg, tea, and vanilla extract, and beat until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the raisins, if using.
  5. Drop rounded tablespoonfuls of dough onto a baking sheet lined with parchment paper. Flatten the cookies slightly with the back of a spoon.
  6. Bake the cookies for 10-12 minutes, or until they are lightly golden around the edges.
  7. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

This recipe is gluten-free because it uses gluten-free oats and almond flour instead of wheat flour. The honey and coconut sugar provide a natural sweetness to the cookies, making them a healthier alternative to traditional cookies made with refined white sugar.
