Chia Chai Pudding

Chia Chai Pudding

Ingredients 

1 1/4 cups water
2 tsp of chai mix
1/3 cup raw cashews, soaked overnight then drained
1/2 tsp vanilla extract
2 tbsp maple syrup
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 cup chia seeds

 

Instructions

1. Steep the chai tea in the water for 5 minutes or make as directed in brewing
instructions.
2. Add the chai tea, cashews, vanilla extract, maple syrup, cinnamon and
nutmeg to a high-speed blender and blend until smooth and creamy. 
3. Pour the mixture into a bowl of the chia seeds and whisk together until
everything is well incorporated. Let sit covered in the fridge for one hour or
overnight to set. 
4. Spoon the chia pudding into small cups and top with cinnamon.
